Grandma Ann's Kitchen
Pasteles Prep Guide
Great pasteles start with the right texture. Here is the simple prep and technique that helps you get the most from your Grandma Ann’s Electric Grater.
Watch: Green Bananas in Under 3 Minutes
Watch green bananas being grated for pasteles masa.
-
Prepare large pieces
- Use large pieces whenever possible.
- Square the ends of green bananas.
- Keep yautía and yuca/cassava whole when they fit.
- Do not cut ingredients into lots of small pieces.
-
Grate ingredients separately
- For pasteles masa, use the regular blade.
- Grate bananas, yautía, yuca/cassava, calabaza, and plantains separately.
- This keeps the texture consistent and lets you combine the masa your way.
-
Start empty, then feed
- Turn the grater on with an empty hopper.
- Feed ingredients steadily.
- Do not let the machine run empty or idle.
-
Stack and Push
- As one piece gets low, place the next piece on top and keep steady pressure with the pusher.
- A small remnant beneath the pusher is normal. Do not force fingers or utensils into the hopper.
-
Safety reminder
- The machine will not turn on unless the hopper is bolted on correctly.
- That is the built-in safety interlock working as designed.
